Salads aren’t just for the summer! This nutritious salad is packed with roasted sweet potatoes, beets, leeks and seasonal lettuce. Warm and hearty - perfect for a cold winter day. The earthy sweetness of roasted sweet potato and raw beetroot is complemented by the nutty crunch of pinenuts and the subtle tang of mustard dressing.

1. Start with the lentils. Take 3 parts water for 1 part lentils. Add some salt. Cook for roughly 25 minutes, taste occasionally.

2. Preheat oven to 200°C. Cut sweet potatoes, beetroots and the white part of the leek into pieces (cut beetroot into smaller pieces than sweet potato and leek), spread on a baking tray, drizzle generously with olive oil salt and pepper. Bake for about 20 minutes, until vegetables are lightly crisped and browned - turning in the oven as needed.

3. In the meantime, toast pine nuts in a pan without oil, then remove from pan. Cut dried tomatoes into fine strips. Wash the lamb's lettuce.

4. For the vinaigrette, peel and finely chop the red onion and garlic, and crunch the mustard seeds. Add everything to a screw-top jar along with the olive oil and lemon juice. Shake vigorously and season with salt and pepper. Add water as needed to achieve desired consistency.

5. Divide lamb's lettuce and vegetables among plates and drizzle generously with vinaigrette. Top with pine nuts and sun-dried tomatoes.

Storage

This salad can be stored in the fridge for up to two days. To revive the salad, simply add a small amount of water and mix well before serving. This will help to refresh the ingredients and ensure the flavors are as delicious as when it was first prepared.
