Proteinreiche Pfannkuchen mit Champignons und Salat

1. Whisk the flour with the baking powder, (warm) water and salt. Leave the pancake batter to swell for about 10 minutes. The consistency should be rather liquid; add a little more water if necessary.

2. In the meantime, wash the lamb's lettuce and mix a dressing of vinegar, olive oil, salt and pepper and pour over the lettuce.

3. Cut the onions into thin slices, quarter the mushrooms and dice the garlic. Slice the dried tomatoes. Heat the olive oil in a frying pan and fry the onions and garlic over a medium heat for about 3 minutes, then add the mushrooms and dried tomatoes. Stir-fry for about 7 minutes. Season with salt and pepper. Finally, add the parsley over the mushroom and onion mixture.

4. Heat some olive oil in a second frying pan and pour the pancake batter into the pan. Fry the batter for 2-3 minutes on both sides to form a golden brown pancake. The first side of the pancake is done when the batter bubbles. Repeat the process with the remaining batter.

5. Top the pancakes with the mushroom and onion mixture, add pumpkin seeds over the salad and enjoy!
