This easy stir fry recipe features Ackermulch, a Swiss pea/bean-based product, that is rich in protein and super tasty!Author:

1 jar of Ackermulch
⅓ jar of cornstarch
jar of basmati rice
jar of cashews
- 1 broccoli
- 1 green onion
jar of soy sauce
1/2 tsp Happie Cayenne pepper
1/2 tsp Happie Ginger (optional)
1-2 cloves garlic, chopped
⅔ jar of cornstarch
4 tablespoons oil, salt and pepper
Chop broccoli, spring onion (including the green part) and garlic clove. Set aside.
In a bowl, add the Ackermulch, then cover with cold water. Leave to rehydrate for about 10 minutes until they have grown in size and softened. Drain in a colander and squeeze any excess water from the pieces.
Using the same bowl (once empty), add the Ackermulch back to it, along with the cornstarch, and stir to coat. Set aside.
In a pot bring to a boil 0.25 l of water with a pinch of salt and add the jar of rice. Once the water boils, turn off the stove and keep the lid closed for 20 minutes.
Make the sauce: In a small-medium bowl, add all sauce ingredients and whisk until the cornstarch has dissolved. Add 25ml of water and set aside.
In a large sauté pan or wok, heat 2 tablespoons of oil, then add the Ackermulch and fry, stirring frequently for 4-5 minutes. Remove from the pan and set on a plate.
In the same pan, heat 2 tablespoons of vegetable oil and fry the white part of the chopped spring onion (save the green part for later), add broccoli florets and garlic for about 3 minutes and stir frequently. Add the sauce and mix well. When the broccoli is soft, add the Ackermulch and mix well. Season to taste with salt.
Serve immediately over rice topped with cashews and green part of the spring onions. Enjoy!
