Ingredients
lemon (½), use only the juice
radish incl. green parts, thinly sliced, greens finely chopped
- 1 spring onion
pomegranate seeds (about ½ pomegranate)
brown lentils

Tuyu Tofu
almonds

1 tsp Happie Bouillon
Oil, salt, pepper
Bit of sugar, honey or maple sirup (optional)

Directions
Cook the lentils in boiling water (400ml) together with the Happie Boillon powder for approx. 25 mins., drain and let cool.
Remove the pomegranate seeds (if you do not know how, check out this video: https://www.bbcgoodfood.com/howto/guide/how-eat-pomegranate).
Whisk together the lemon juice, oil, something sweet (sugar/honey) if desired and season with salt and pepper.
Cut the radishes in thin slices, chop the radish greens finely. Cut the spring onion in rings. Dice the tofu and marinate with a bit of lemon juice.
- Add all ingredients including the pomegranate seeds to the salad dressing, mix.
Chop the almonds and add on top of the salad. Now enjoy your summer dish!
