This week's One Pot Quinoa with mushrooms, zucchini and tomatoes is a balanced and filling vegan meal: Enjoy!

Ingredients
1 onion
½ bag of mushrooms
1 zucchini
grape tomatoes
½ lemon
quinoa
sunflower seeds

1 teaspoon Happie Bouillon

½ teaspoon Happie ginger

Directions
Finely chop onions and slice mushrooms. Halve zucchini and cut into slices. Cut tomatoes in quarters.
In a pot, sauté mushrooms and onions in olive oil for about 3 minutes. Add quinoa from your jar and sauté briefly.
Create a vegetable broth by adding 300ml of water with 1 teaspoon of Happie Bouillon. Add vegetable broth and bring to a boil. Add ½ teaspoon of Happie Ginger from your jar and simmer covered for about 5 minutes. Afterwards add the zucchini and let cook for another 10 minutes.
Mix in the tomatoes. Season with lemon juice, some extra olive oil, salt and pepper.
Sprinkle with sunflower seeds and enjoy!
