Spelt Pasta with Avocado-Cashew-Pesto

Ingredients
1 jar of spelt pasta
1 avocado
1 clove of garlic
jar of cashew nuts
- 1/2 lemon (only juice)
basil
jar of yeast flakes
- 3 tbsp olive oil
- 2 tbsp water
salt and pepper
tomatoes, chopped
½ lemon juice
parsley, chopped (only ½ of parsley if you have 3 recipes)
olive oil, salt and pepper

Directions
For the pesto
Roughly chop 1/3 of the cashews. Toast them in a frying pan until golden brown and set aside.
In the same pan, heat some olive oil and roast the garlic clove until slightly brown.
Peel and chop the avocado. Blend all ingredients (except the pasta) in a food processor until smooth. Season with salt and pepper, add some extra water if the consistency is too thick.
For the pasta
Cook the spelt pasta in salt water, drain. Mix pasta with the pesto, sprinkle with toasted cashews and enjoy!
For the tomato salad
Cut tomatoes into pieces and parsley, put into small salad bowls and mix well. Add salt, pepper, olive oil and juice of ½ lemon.
