Lentil Patty with Sweet Potato Fries

Who does not like a good burger? The Happie burgers are super easy to make and stuffed with healthy vegetables. They're packed with protein, fibre and flavour!

Ingredients

1 tablespoon of polenta
- 2 tablespoons olive oil

1 teaspoon of paprika powder

1 pinch of cayenne powder
red lentils
1 tablespoon of chia seeds, with 2.5 tablespoon of water ("chia egg")
nutritional yeast flakes
- 1 small onion, finely diced
¼ of the cashews, crushed
½ clove of garlic, chopped
3 tablespoons of oat flakes

1 teaspoon of Happie paprika powder

1 teaspoon of Happie Bouillon (for cooking the lentils)
¾ of the cashew nuts
lemon, juice

Directions
For the tomato salad
For the tomato salad, cut the tomatoes in chucks and mix it with a bit of olive oil, salt and pepper. Set aside.
For the sweet potato fries
Preheat oven to highest setting. Peel sweet potato and cut into evenly sized sticks. Place in a bowl and mix with 1 teaspoon of Happie Paprika, pinch of Happie Cayenne, tablespoon of polenta and 2 tablespoons of olive oil.
Place fries on a baking paper and bake for about 20 minutes in the oven. Remove from oven and season with salt and pepper.
For the lentil patties
Boil the lentils from your jar in 250 ml of water and 1 teaspoon of Happie Bouillon powder for about 20 minutes until very soft (they should almost fall apart). Add splashes if it gets too dry. When ready, get rid of excessive liquid and cool in a bowl.
Add 2.5 tablespoons of water to your chia seeds. Let it rest until it becomes “chia egg”
Now mix it with lentils with the remaining ingredients under "For the Lentil Patties" and with wet hands form into small patties (about 1-2 cm thick). Heat olive oil in a frying pan and fry the patties over medium heat for about 4 minutes on each side until golden.
For the cashew cream
Bring a little water to a boil and pour the boiling water over ¾ of the cashews in a small bowl so that they are just covered with water. Let stand briefly. Now remove about half the water and blend it with ½ a clove of garlic, lemon juice, salt, and pepper.
Arrange the lentil patties, sweet potato fries, tomato salad and cashew cream together and enjoy your Happie meal!
