Fasolakia with green beans, potatoes & tomatoes
2 cloves of garlic

Chop the onion and cook in olive oil in a frying pan until tender for about 5 mins. Then add garlic, cumin from your jar, and oregano. Cook for another 3 mins. Heat up the oven already to 180 degrees Celsius.
Add tomatoes, 1 cup of water, bay leaf, beans and potatoes. Season with salt and pepper. Raise the heat and simmer for 15min.
Cover and transfer to an oven dish in a heated oven. Cook until sauce slightly thickens. This takes about 30min. You may want to add bits of water if needed.
Remove from the oven and add lemon juice to your likening (max half the lemon because you will need it for the couscous this week). Then add the parsley. Drizzle some olive oil over it, optionally add salt and pepper to your liking.
