Ingredients
- 1 clove of garlic
- 1 onion
- 1 fennel bulb
- 1 kohlrabi with leaves
1 tomato

Directions
Preheat oven to 180 °C top/bottom heat.
Dice onion, finely chop garlic. Cut fennel and kohlrabi into cubes of about 2cm. Cut kohlrabi leaves into strips.
Brush an oven dish (preferably a casserole dish) with olive oil. Add vegetables, onion and garlic to baking dish along with 2 teaspoons of Happie Paprika powder and mix. Drizzle with olive oil and place in oven for 15 minutes.
Mix 400ml of water with 1.5 teaspoons of Happie Bouillon to get a vegetable broth. Now, remove the oven dish from the oven. Add uncooked rice from your jar, vegetable broth, kohlrabi leaves and some lemon zest (grated) and pepper to the vegetables. Mix well.
Return baking dish to oven and cook for about 20 minutes. Remove dish from oven, stir and add a little water if needed. Place tomato on top of vegetable rice and return to oven for another 10 minutes. Sprinkle pine nuts over rice 5 minutes before end of baking time.
Finely chop the parsley. Remove vegetable rice from oven and drizzle with a little olive oil and squeeze one third of the lemon and sprinkle with parsley.
Recipe Note
- Kohlrabi leaves often end up in the trash - but they are edible and very tasty! They can be processed similarly to spinach.
- A yogurt dip with a little lemon juice and parsley goes well with vegetable rice.
