This recipe needs a bit more time to prepare. We are curious to hear from you what you think about that, and feel free to leave your comments in the reviews. It is best to soak the beans in water overnight (or at least 6 hours), this will shorten the cooking time.
Bean Chili with Rice
The night before
soak the beans in water and let stand overnight
For the beans
Pour off the water in which you soaked the beans, then rinse beans with fresh water.
Put beans in a pot with water and bouillon powder and cook on low for about 60 minutes. The cooking time of the beans varies slightly depending on how long the beans were soaked. If they are still hard after an hour, let them simmer for 10 more minutes.
For the rest
Heat olive oil in a pot. Add diced onion, carrot, bell pepper and garlic and sauté for about 5 minutes. Then add paprika, cumin and cayenne chili pepper and sauté briefly
Add cooked beans with some of the cooking water (about 1dl) and tomato sauce. Simmer on low heat for at least 20 minutes. If necessary, add a little water halfway through the cooking time.
Meanwhile boil 0.25L of water with a pinch of salt in another saucepan. Add the basmati rice from your jar. Once boiling, turn off the heat and keep the lid closed for 20 min.
Season to taste with salt and pepper and a little lemon juice. If you like spicy food, you can add some extra cayenne chili. Serve together with the rice.
- You can also cook the beans the day before; they will easily keep in the refrigerator for a few days.
- Home-cooked beans are more flavourful than canned beans. And besides, there is no packaging waste!
- Add some sour cream or yogurt as a savory topping.
